Hyssop officinalis

Hyssop is an aromatic herb with a minty, slightly bitter flavor, often used in Mediterranean and Middle Eastern cuisines. Its blue or purple flowers and aromatic leaves are rich in essential oils. Hyssop pairs well with roasted meats, stews, soups, and herbal teas. To cook with hyssop, you can use fresh or dried leaves. Add a few leaves to marinades, sauces, or vinaigrettes for a fragrant kick. You can also infuse it into oils or use it as a garnish.
